Every morning should be started with a big fruit salad and rawnola. It’s so satisfyingly sweet and simple. Assembling a fruit bowl is easier than frying something up in a skillet or putting something in the oven to bake because there’s no cooking involved, just a little chopping. Before school or work I always start off with fruit. It instantly gives me energy in the morning and hydrates me along with the 4 cups of water that I try to drink before noon.
Each component of this fruit bowl has something to offer. The berries and starfruit are full of antioxidants and vitamin C. The rawnola is complete with fiber, we’re talking 80% here, and cantaloupe is a great source of potassium and B vitamins. All together, this cantaloupe bowl has almost 200% vitamin C and vitamin A. It’s like a morning daily vitamin without needing to swallow a pill. There’s satisfaction in every bite.
- 1 cantaloupe
- 4-5 strawberries
- Handful of blueberries
- Handful of blackberries
- 1 starfruit
- Optional: Coconut flakes
- ½ cup oats
- 8-10 gooey pitted dates
- Slice the cantaloupe in half and scrape it out into balls with a melon baller
- Slice the strawberries and the starfruit.
- Place the cantaloupe back into the cantaloupe shell and top with fruit and rawnola
- In a high speed blender, blend up the oats and gooey dates and get them out when they come together and bind up into a sticky texture.
