We just went out to this restaurant a few nights ago and one of the things they’re known for is building your own meat and cheese plate. Many of you already know I’m plant based so I didn’t have any interest in the meat or cheese but in the middle of the board that they brought out I found apples and sliced almonds drenched in honey. I couldn’t believe that something this simple was so delectable and good. It had me saying why haven’t I been doing this my whole life? It’s not like nuts and honey are anything new to me but it never crossed my mind to put them together for a healthy snack. This recipe was inspired by that and apple nachos that have appeared on Pinterest.
This has become my go to sweet treat. It’s satisfying, filling, and kid friendly too. I prefer to use local honey because it helps ease my allergies during pollen season, something that’s torturous here in the south. If you can’t find local honey the next best thing on the market has to be raw Orange Blossom Honey. Oh my goodness, when you try it, you’ll be hooked. It’s basically the only store-bought honey I will buy. I recommend not just using regular almonds but sliced almonds because trust me, texture is everything.
The type of apple you choose is also important. I like something a little on the tart but juicy side since we’re dipping it into something extremely sweet, that contrast makes it super yummy. I used both green and red apples for flavor and color variety. The type of apples I used for this were Royal Gala and Granny Smith. Doesn’t it look more appealing that way?
I’m sure you’ve all heard of pairing apples with peanut butter, it’s like the perfect combination right? Well you can use peanut butter for this but I chose to go with almond butter because it tastes, in my opinion, so much better than regular peanut butter. It’s a different kind of nutty-ness that goes perfectly with apples. If I’m being completely honest I think this is the new peanut butter. It’s also much creamier to spread over the apples and dip into. I found it best to buy unsweetened and unsalted almond butter because why add more sugar when the apples are already sweeted naturally and with the honey almonds? It doesn’t even need the extra sugar.
I never thought dressing up apples would be so delicious and fun. If you’re trying to cut back on refined sweets, then you need to try this. It won’t give you that high with a huge crash at the end, it’s instead extremely satisfying like I said already. I can’t wait for you to try it. This is also a great snack for the kids too, they’ll love it!
- 2 apples sliced
- ¼ cup sliced almonds
- 2-3 tablespoons local or orange blossom honey
- 1 tablespoon unsweetened and unsalted almond butter
- Arrange the apples around a plate
- Mix the almonds and honey together and place the mixture at the center of the sliced apples
- Drizzle with almond butter
