Life has been hectic with final exams but I’m happy to say that I’ve finally reached the end to this semester. I don’t think I’ve been more excited about summer. I’m one hundred percent ready for sleeping in, enjoying stress-less evenings, and finally getting out to enjoy this beautiful weather, at least until I have to go to work and start up summer classes. It never seems to end but I enjoy it, productivity keeps me motivated.
As I was passing through the local market I couldn’t help myself to notice all the berries, they bring me back to my childhood of picking fresh strawberries at local farms and picking blackberries that were growing wild in the woods. With more than we could eat we would bake pies and muffins out of them, galettes too. Those were the good old days. Looking back on it now I’ve started to consider growing some blueberry and blackberry bushes in the backyard especially since they can be kind of pricey in stores.
With all this talk about berries I wanted to share with you one of my favorite raw dessert recipes of berry cobbler. It’s decadent and rich. It’s sweet and you don’t even have to preheat your oven so it’s perfect for hot days. Nothing about this dish is cooked and all you need is a food processor. It’s not only healthier than the traditional berry cobbler it’s quicker and easier to make. The crust is held together by gooey dates instead of butter and the berries are sweetened by agave instead of sugar. Did I mention the fact that berries are considered superfoods and are full of antioxidants as well?
If you’re out there wondering how in the world you can eat healthy and still indulge in your favorite dessert items, then let this recipe prove that you can. Raw fruits and nuts are just as delicious and more satisfying; you won’t be left with a guilt trip or feeling sick afterwards. I hope I’ve encouraged you to go out and pick some fresh berries or plant some of your own because you’ll definitely want to make this again.
- Small 6oz package of each blackberries, raspberries, blueberries
- ½ teaspoon vanilla extract
- 1 tablespoon agave
- ¼ cup oats
- 1 cup walnuts
- 1 cup almonds
- ¼ cup honey or agave
- Pinch of salt
- Preheat oven to 350
- In a food processor combine the oats, walnuts, almonds and a pinch of salt, pulse until coarsely ground, then add the honey and mix until it’s softened and a little sticky
- In a small bowl combine the blackberries, raspberries and blueberries with the vanilla extract and agave. Place into a baking dish and cover with the nut and oat mixture.
- Bake for 20-25 minutes. Serve warm
