At work everyone decides on something to eat for lunch every day. I on the other hand like to bring my lunch because fast food and I just don’t get along. It makes me feel sluggish, groggy, and I don’t crave it the way I used to after going plant based. The one request this week has been Subway or Firehouse subs and when I heard that suggestion my taste buds woke right up and I started craving subs. While I love the convenience of take-out I have this obsession with cooking (if you didn’t already know) and I stumbled across this wonderful baguette flavored like an everything bagel, which mind you is my favorite thing in the whole world. With that I was off to making homemade subs.
This bread though is something I will probably be raving about for a long time because not long ago my favorite bagel shop closed down and now we have no source of fresh bagels. Yes, we have Dunkin’ Donuts and Starbucks which both sell bagels but let me be the first to tell you it’s just not the same. So to find a baguette covered in my favorite flavors ever this meant we were going to have a sub night or two.
Now when I make subs I love to prepare all the ingredients like they do at any old Subway and let everyone walk by and build their own. In fact, that’s how subs should be made. This recipe is extremely flexible and should be catered to all of your favorite things. Below I have listed everything I put on my sub and if you love it then great but if I’ve left off a thing or two feel free to add it or take away anything.
Since it’s a beautiful time of the year for picnics and hiking you should totally make some of these and take them along with you. Whether you like your sub packed real thick with veggies and olives and peppers or slim with only a few add-ins I think you’ll find this extremely satisfying. My tummy is rumbling now just talking about it so excuse me while I go make another!
- 2 Italian Sub rolls cut in half and sliced down the middle
- 1 cucumber
- 1 can olives sliced
- red onion sliced
- ½ cup yellow banana peppers
- 2 cups spinach
- oil and vinegar to taste or italian dressing
- Fill the sub rolls with all the ingredients to your taste, top with oil and vinegar, serve
